Parmigiano Reggiano 36 months shows a bright straw yellow colour with plentiful, large tyrosine crystals that reveal its crumbliness. It releases scents of pineapple and dried fruit and a savory and spicy taste, with a touch of pepper and nutmeg.
How to taste it
This naturally lactose-free cheese, can be tasted with full-bodied red wines or passito white wines. The irregular flakes that can be obtained thereof, perfectly blend with locally made Traditional Balsamic Vinegar of Modena PDO or honey, which contrasting flavour will enhance the aroma of Parmigiano Reggiano, also known as "stravecchio" (extra-aged).
Additional information
This intense-perfumed "extra-aged” Parmigiano Reggiano is drier, even more friable and grainy, thus easy to grate. It is 100% lactose-free and very easy to digest, therefore specially recommended for lactose-intolerant end users, including children.
