Light recipe with Mortadella and Parmigiano Reggiano

Who says you always have to give up cured meats to stay fit? Here is a light recipe full of flavor based on Mortadella!

Ingredients: 100g of rocket, 30g of Parmigiano Reggiano flakes, 100g of Mortadella Felsineo Oro Salumificio Magnoni , 2 tablespoons of Balsamic Vinegar , 1 teaspoon of mustard, 2 tablespoons of Extra Virgin Olive Oil , Salt and pepper to taste

Preparation: Prepare the vinaigrette by mixing in a bowl balsamic vinegar, mustard, EVO oil, salt and pepper. Pour the rocket into a separate bowl and dress it with the prepared vinaigrette, mixing well.

Cut the mortadella into cubes and add it to the salad. Finally, sprinkle it with the flakes of Parmigiano Reggiano.

It's ready to enjoy!

Alternatively, you can also add a few slices of diced cherry tomatoes for an extra touch of color and flavour.

PS: if you want to make the recipe even lighter, you can replace the mortadella with lean raw ham .
