Here are the ingredients you will need for 4 people:

800 grams of roast beef, 1 teaspoon of salt, 1 teaspoon of freshly ground black pepper, 1 teaspoon of mustard powder, 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, 2 tablespoons of EVO oil , 1/4 of cup of Balsamic Vinegar of Modena , 1/4 cup of beef broth.

Prepare the roast beef first:

  • Preheat the oven to 220°
  • Mix the salt, pepper, mustard powder, paprika and garlic powder in a bowl. Spread this mixture all over the sides of the roast beef.
  • Heat the EVO oil in a skillet over medium-high heat. When the oil is hot, brown the roast beef on all sides until golden brown.
  • Transfer the roast beef to a roasting pan and cook for about 20-25 minutes for a well-done roast beef, or 15-20 minutes for rare.
  • After the cooking time has elapsed, remove the roast beef from the oven and let it rest for at least 10 minutes before cutting it into slices.

Meanwhile, prepare the balsamic vinegar sauce: Set the pan in which you cooked the roast beef over medium heat. Add the Balsamic Vinegar and beef broth and mix well. Cook about 5 minutes, stirring often, until the sauce has reduced and thickened slightly. Arrange the roast beef slices on a serving platter and drizzle with the sauce.
