Ingredients: 200 g of 00 flour, 100 g of butter, 100 g of grated Parmigiano Reggiano , 1 egg, 1 pinch of salt.

For the filling: 500 g of ricotta cheese, 150 g of sugar, 3 eggs, 50 g of grated Parmigiano Reggiano, 1 teaspoon of grated lemon peel, 1 teaspoon of vanilla.

Preparation:

In a bowl, mix the flour, butter, Parmigiano Reggiano, egg and salt to form a smooth dough. Wrap the dough in cling film and refrigerate for at least 30 minutes.

Meanwhile, prepare the filling by mixing the ricotta, sugar, eggs, grated Parmigiano Reggiano, lemon zest and vanilla in a bowl. Preheat the oven to 180 degrees C.

Spread the dough on a tart pan lined with baking paper, pricking the bottom with a fork. Pour the filling on the tart and level well. Bake for 40-45 minutes, or until the tart is golden brown and the filling is cooked through. Leave to cool before serving.
