Giorgio Gambigliani Zoccoli recalls when, around the 1970s – a period in which balsamic vinegar was produced exclusively for passion and self-consumption – his grandfather Giorgio decided to start up as many as three hundred barrels. 

“At the time, no one knew that in the mid-eighties the product that we jealously guarded in our attics would also be liked by non-Modenese people a lot and that they would be interested and willing to buy it. My father Mario and my grandfather Giorgio therefore decided to further invest in their passion! Now the passion for the "black gold of Modena" also flows alive within me ."

THE SECRET OF SUCCESS? A SINGLE RAW MATERIAL

The production of Traditional Balsamic Vinegar of Modena DOP "AFFINATO" by Acetaia Gambigliani Zoccoli begins in the vineyards of Lambrusco and Trebbiano grapes, typical of Modena and is completed in the Acetaia located, as per tradition, in the attic of the family home.

In September, the grapes are harvested and pressed, resulting in the must which is then cooked for several hours. Subsequently a long process takes place which starts from the natural fermentation of the product, without yeasts, until it is transformed into a single raw material which is the cooked , fermented and acetified must.

The cooked must is left to age for at least 12 years in traditional casks of graduated sizes and of different woods such as chestnut, cherry, oak, mulberry, black locust, acacia and juniper.

This is how the "AFFINATO" Traditional Balsamic Vinegar of Modena DOP from Acetaia Gambigliani Zoccoli was born , one of the most important and recognized products of Made in Italy gastronomy.
